Edamame!

Edamame, otherwise known as baby soybeans, is as good a source of protein as meat or eggs! Edamame is a wonder vegetable, and the only one that contains all 9 essential amino acids. And kids love it too!
You can buy them in the pod or shelled for easy adding to salads and grains. Edamame is the perfect vegetable to plant with your kids, as the ones you grow yourself taste fantastic. Fun to grow, fun to pick, fun to eat.
You can also find them in the freezer section of most markets. Simply pop them from the freezer into boiling water. When they float to the top they are done. Serve the pods in a bowl with a sprinkling of salt or low sodium soy sauce.
