
Peanut Butter and Banana Sandwich

How many times has Laurie said, “Dinner is not about three courses and dessert, it can be as simple as a peanut butter and jelly sandwich, it is the time you spend together that matters.” She has said it many, many times. And she is right!
So I am going to say it too, but let us make it a little cozier, by grilling the sandwiches with bananas and honey. Warm melting peanut butter, sweet bananas and crunchy bread, and there will still plenty of time left over to play a few games around the table…
You need (for each person):
2 slices of a lovely whole grain bread
2-3 Tablespoons peanut (or your favorite nut) butter
1 Tablespoon honey
½ a banana sliced lengthwise
A bit of butter or olive oil for butteringTo Make:
Butter one piece of bread with peanut butter, drizzle with honey, top with the banana slices and the other piece of bread.
Butter the outside of the sandwich with butter or olive oil and “grill” on a dry medium hot skillet until golden on each side.
Slice artfully in half and serve with a glass of milk and fruit.
Of course there are plenty of ways to expand on this sandwich with: thinly sliced apples or red pepper jelly or sliced strawberries or peaches. And the very great… Nutella and peanut butter.
