Fresh and Fruity Summer Porridge (Bircher Muesli)


Porridge is not just for winter! Here is a cool, tangy, creamy, fruity, porridge for summer.

Mix raw rolled oats, yoghurt and fruit. Spoon it into pretty glasses or mason jars. Pop them into the fridge overnight so all the flavors get to know each-other.

Good Morning! Today you have time to have breakfast in the sun or just toss a mason jar to-go into little hands and big hands as they run out the door.

Fresh and Fruity Summer Porridge (Bircher Muesli)

You need:

1 cup rolled oats (not “instant”)
3 cups plain yoghurt or kefir
3 tablespoons honey, maple or agave syrup
2 large apples (not peeled), grated
1 cup fruit like kiwi, raspberries, sliced strawberries or black berries

Optional additions:
1 tablespoon flaxseeds for health
1 tablespoons chia seeds for speed
A handful nuts for power
A pinch of cardamom, cinnamon or vanilla for joy

In the morning garnish with…
Fresh fruit for beauty

To make 4-6 servings:

Mix all the ingredients together, making sure that the apple is completely folded into the yoghurt (this prevents it from becoming brown).

Spoon the porridge into glasses or mason jars, cover and put into the fridge. Have a good night’s sleep.

The next morning, as the sun rises, garnish the porridge with a bit of fruit. Call the troops to breakfast.
