Quick Fix: Soup with Greens; Tuna Ceviche

Here are a couple more quick fix dinner ideas, dishes you could probably throw together with items already in your kitchen.
First, try this Quick Soup with Greens: In your soup pot sauté some onions and plenty of garlic, add a small handful of white rice or quinoa, simmer in stock for 15 minutes, add chopped greens, simmer for an additional 5 minutes or until the grains are very tender. Serve with grated Parmesan and a squeeze of lemon. Easy, and delicious!
Or how about Tuna Ceviche? Simply drain canned tuna (packed in water), toss with lots of lime juice, diced red onions, tomatoes and cilantro, and then serve on a bed of shredded lettuce or cabbage topped with tostada shells or tortilla chips.
