Blanca’s Locally Famous Healthy Fruit Popsicles

Here’s a delicious, easy-to-make 4th of July treat: Blanca’s locally famous healthy fruit popsicles.

YOU NEED

1 pound organic mixed sweet ripe berries, like strawberries, blackberries, and blueberries (or 1 pound organic frozen, defrosted berries)
2 ripe bananas, cut into chunks
6 ounces vanilla yogurt (optional)
1 cup orange juice
1⁄4 cup honey, or to taste (just remember that once frozen, anything will taste less sweet)
Popsicle molds (or small, empty yogurt containers and craft sticks)

TO MAKE ABOUT 12–15 POPSICLES

Put all the ingredients in a blender and blend until smooth. Pour the fruit into molds; insert the sticks, and freeze until solid, about 4 hours. Meanwhile, go jump into the sprinklers.

Cook’s Tip

After these Popsicles are all eaten up, let your kids experiment with new flavors. How about watermelon blended with honey, lime, and mint? Or crushed pineapple and coconut milk? Fresh peaches, ripe raspberries, and orange yogurt?
