Spinach Tortelinni Soup

It’s the beginning of the week, with big changes in the world and a great day to hug your kids tight (and then put them to work in the kitchen by your side). Today’s The Kids Cook Monday recipe is for a Spinach Tortellini Soup and it is so, so quick and easy to make! And, once you have the cheese tortellini (either fresh or frozen), the rest of the items you’re likely to have in your pantry. And you know how much we love pantry dinners.  

This recipe comes to The Kids Cook Monday from Andrea Meyers based on a recipe from Fine Cooking magazine. We love that in addition to being a busy mom of three and a food blogger, Andrea’s also an edible gardener. Because you know how much we also love growing our own veggies as much as possible!  

At your family dinner tonight, be like the Obamas and play one of their favorite family dinner games: Rose and a Thorn. This game is good for families with children of all ages. Everyone around the table (parents included!) says what the best part of their day was (the rose) and what the not-so-good part of their day was (the thorn).  You’ll get a lot more information out of your family than simply asking, “How was your day?”
