Kale Caesar Salad

Our website should perhaps be called the Family Dinner… with kale. But we are going to keep throwing kale recipes out there and hopefully they will make you as happy as we are.
The Caesar salad is a sneaky salad, so good and crunchy, but nutritionally it’s about par to eating a sofa pillow, the latter having more fiber and vitamin K. But exchange the romaine lettuce with our beloved kale, toss out the white bread croutons and throw in some whole wheat ones… then you have a salad that is as healthy as it is tasty.
2 large vigorous bunches of kale, stems removed, torn into small bite sized pieces
Bunch of whole grain croutons (see recipe below)
1⁄2 cup Parmesan cheese
For the Dressing:
2 cloves garlic, minced
1 teaspoon Worcestershire sauce
3 tablespoons mayonnaise (low fat is fine)
1⁄4 cup fresh lemon juice, and the grated rind of one lemon
2 tablespoons grated Parmesan cheese
1 tablespoon Dijon mustard
1⁄2 cup light-tasting olive oil
Salt and pepper to taste
TO MAKE 6 SERVINGS
Put all the salad dressing ingredients into a large bowl and whisk until smooth.
Now take a piece of kale, dip it into the dressing, and see how it tastes. Does it need more salt? Or lemon? Make it taste exactly how you like it best, then toss with the kale, croutons, and cheese.
Whole Grain Croutons
It’s easy to make your own croutons! All you need is some whole grain bread, cut into cubes, tossed with a bit of olive oil, sprinkled with salt and pepper, and perhaps some minced garlic and Parmesan cheese, too. Spread onto a sheet pan and bake in a 400 degree oven for about 15 minutes. Ta-da, done.
