Two Minute Teacup Eggs

Calling all kids to put on aprons! Having a few cooking skills up your sleeve is very much like knowing magic tricks, like with this recipe you turn a few fresh ingredients into a dish in 2 minutes! All you do is put out the ingredients and let everyone assemble their own teacup eggs, then you pop them into the microwave and hocus-pocus you have your own little “omelet.”
P.S. Please don’t think eggs are just for breakfast, no they make perfect little lunches and dinners too!
You Need (for each person)
2 tablespoons milk
A little olive oil on a paper towel (to oil the teacups)
In small bowls put out some toppings, any or all of your favorites, as long as they cook quickly. For example:
* Swiss cheese, a bit of corn, chopped tomatoes and fresh basil
* Chopped ham, cheddar and sliced scallions
* Fresh mozzarella, pesto and peas
* Roasted peppers, jack cheese and ham
Give everyone 2 eggs and a microwavable teacup (mugs or ramekins are fine too). Rub a little oil on the inside of the teacup, then crack the eggs into your cup and with a fork gently beat the eggs until they all mixed up, mix in 2 tablespoons milk.
Now you get to make it taste the way you want it by adding as many, or as few toppings as you like, just don’t fill the cup more than ¾ the way full (so it doesn’t overflow).
Pop your teacup into the microwave and cook on high for about 45 seconds. With an oven mitt (you might need your big helper to do this for you) take the eggs out and give them a gentle stir, then put them back in for about 45 seconds longer (more or less depending on your microwave) until the eggs have puffed up and are no longer runny. Salt and pepper to taste.
You can also make these in the oven, it just takes a few minutes longer, and you will need to use some ovenproof ramekins instead of teacups.
Preheat the oven to 375 degrees. Diligently oil the ramekins. Then continue as above, when you are ready to bake the ramekins place them on a baking sheet in the center of your oven and bake for 20-25 minutes or until the eggs are golden, puffy, and the eggs are not jiggly.
